Waffles {Dairy-free, Egg-free}


I love waffles. Not so much eating them as I do love the convenience and speedy prep time involved. My kids love them. Hubs likes them as long as I provide a meaty side or a fried egg. So, when I remembered I 'needed' to be at a friend's baby shower/Ladies' Night Out last night, I quickly ran to the pantry to be sure I had all the necessary ingredients for waffles and much to my delight, I did. So, here you go. You can make these a million different ways and with a myriad of topping options, so be creative!

Waffles {Dairy-free, Egg-free}

Bisquick

Almond Milk

Ground flax seed

Vegetable Oil

Vanilla

Cinnamon

Follow the instructions on the back of the Bisquick box for Waffles and substitute almond milk for milk, 2 T ground flax seed for the eggs and then add in some cinnamon and vanilla for extra flavor. Minimal prep + minimal cook time = great last-minute meal. Serve with your choice of sides. I topped our waffles with fresh blueberries and strawberries and a wee bit of syrup. Big hit with the fam, as usual.

Summer Grilled Chicken Wrap {Allergy-Free}


I just whipped this up for lunch and it was absolutely delicious! Whether you are food allergic or just trying to cut back on carbs/sugar, this one's for you.


I used leftover grilled chicken from dinner last night. {I rubbed it with a dash of sea salt/black pepper and some Mrs. Dash Lemon Pepper No Salt Added Seasoning and grilled it.} I took half of a chicken breast and chopped it to my liking. Added about 1T each of chopped red onion and chopped green pepper. 1 T Nayonnaise {egg-free, sugar-free mayo}. 1/4 of an avacado. Mix all ingredients together. Wash two leaves of fresh, green leaf lettuce and pat dry with a paper towel. Spoon your chicken mixture into the bigger leaf and roll it up. Add the other leaf for more support. It is a delicious, healthy lunch for anyone. My kids may not go for red onion, but you can add whatever you like to it!

Southwest Black Bean Stew {Allergy-Free}


This recipe is delicious! And who doesn't love a crock-pot meal?? I've adapted this from a recipe my sister-in-law came up with. I usually call it 'that chicken-black bean-cream cheese-crock-pot meal', but thought that title might be a little long. So, without further ado...

 

 

 

 

Southwest Black Bean Stew {Allergy-Free}

1 lb boneless, skinless chicken breast

2 cans Bush's seasoned black beans

1 bag frozen corn {non-buttered}

Emeril's Southwest Seasoning {or similar}

1 small jar of your favorite salsa {THIS IS KEY! I love Trader Joe's salsa, but it has been processed around several allergens}

8 oz Tofutti Cream Cheese {this is dairy-free}

Put chicken, beans, corn, seasoning and salsa in the crock-pot. Cook on low for 8 hours. About an hour before cook time is over, use a fork to break up the chicken. It should be very tender and falling apart. Cut the cream cheese into cubes and put in the crock-pot. Once cream cheese is melted, stir the stew to incorporate it throughout. Garnish with cilantro, Tofutti brand sour cream and salsa. Serve over rice or with tortilla chips.

Dinner's On!

I love Spring! Spring means warmer weather, playing outside, windows open, patio living, flowers blooming (we won't talk about the p-o-l-l-e-n) and grilling out for dinner! Tonight we had a yummy dinner that even the kids loved didn't complain about. =] Grilled Chicken (drizzled with olive oil, some spices of choice), Grilled fresh Asparagus (yumm-O and yes, the kids even ate it!) and Uncle Ben's Long Grain and Wild Rice*. Fresh Strawberries for dessert. What's not on the menu is Dairy, Peanuts or Egg! All fresh, yummy foods that my whole fam can enjoy. *The rice does contain wheat durum semolina for those sensitive to that.
This menu meats my criteria of healthy, fresh food. Not too heavy, no artificial sugar and free of my child's allergens. =] Grilling makes eating with food allergies so much easier! Welcome, Spring!!
