Easy Cinnamon Rolls {Dairy-Free, Egg-Free}

This is perhaps the easiest and fastest way to make cinnamon rolls, allergy-free or not. I love that it is quick and different than the everyday cereal breakfast. My girls are out of school today so I decided to see what I could make 'fun' for breakfast that wouldn't take much time. These were a hit!

Easy Cinnamon Rolls {Dairy-Free, Egg-Free}
1 can Pillsbury Crescent Rolls {open and separate into triangles}
Cinnamon/Sugar mixture {we have a shaker with cinnamon/sugar mixed together at all times}
Smart Balance Light buttery spread {this is dairy-free}
Pillsbury Vanilla Frosting {contains soy}

Spread Smart Balance onto each triangle, then shake the cinnamon/sugar all over the 'butter'. Roll up as you would a regular crescent roll. Bake rolls at 375 for 11-13 min or until golden brown. Melt 3T frosting in microwave for 20 seconds. {Not too long or it will get very thick and gooey.} Drizzle over baked rolls. Serve.

Ham Roll Ups {Egg-Free, Dairy-Free}

My kids LOVE these! And I love them because they are quick and easy to make. My mom used to make these when I was young and I remember them being one of my favorite meals. These are normally served with homemade cheese sauce {recipe below} but my allergy girl loves these without the cheese. She begs for more!

Ham Roll Ups {Egg-Free, Dairy-Free}

1 pkg Pillsbury Crescent Rolls {contains wheat}
ham slices {or leftover chicken}
steamed broccoli


Cheese Sauce {dairy-free}
2 Tbsp Smart Balance Light
2 Tbsp Flour
1 cup Almond Milk
1 cup Daiya Vegan Cheese, shredded
{I make regular cheese sauce because my allergy girl does not like the dairy-free cheese sauce and prefers to eat them plain, but the above recipe will work for a dairy-free cheese sauce.}

Monkey Cupcakes

Tonight we were having a special snack in our children's class at church so I had to come up with an allergy-friendly version for my daughter. The theme was monkeys and the rest of the class was having cupcakes/cake, so naturally I chose to make my girl a monkey cupcake. It was actually fun and turned out pretty good, so I thought I'd share it with you. {Just don't pay too much attention to my lack of artistic ability in the cupcake decorating!}

Use your favorite cupcake recipe. I used a boxed yellow cake mix from Duncan Hines because it contains no milk or nuts and I substitute the 2 eggs with Ener-G Egg Replacer.

Buy or make your favorite chocolate frosting. I used Pillsbury Milk Chocolate which actually has no milk in it....go figure. Always check the label, don't take my word for it.

After you bake and frost your cupcakes, get out 3 solid color cookies that are allergy-friendly. I used graham crackers because that is all I had on hand. Round cookies are ready for use, but if you are using graham crackers, carve out two small half circles and one larger circle to use for ears and the nose/mouth area. See pic.

Next, use white frosting or mini marshmallows to make the whites of the eyes. Then, add a dark pupil on each side. {I used tiny hot chocolate style marshmallows because that's all I had on hand.} You can make the nose and mouth by piping chocolate frosting accordingly or by melting chocolate chips like I did and using a toothpick to draw it on. I didn't have much time, so I went the easy route.

Easy Apple Dumplings {Dairy-Free, Egg-Free}

I came across a recipe for these delicious apple dumplings a few months ago here and kept thinking about making them, but put it off....until yesterday. Don't let it fool you. Just because it has apples in it doesn't mean it's healthy - but it is SO YUMMY! I tweaked the recipe a little bit to make it less sugary and also make it allergy-friendly. So, here it is!

Easy Apple Dumplings {Dairy-Free, Egg-Free}

1 can refrigerated Pillsbury Crescent Rolls
1 apple, washed and cut into 8 slices {skin still on}
1/4 cup Smart Balance Light (melted)
1/4 cup brown sugar
cinnamon

Preheat oven to 350. Roll out crescent roll dough. Wrap each apple slice in one triangle of dough. Place in a greased pan. Sprinkle cinnamon on top of all the 'dumplings'. Mix melted Smart Balance Light and brown sugar together. Pour over each dumpling. Bake for 25 minutes. Serve warm alone or with Tofutti brand {dairy-free} Vanilla Ice Cream. YUM! (You can double, triple, etc. this recipe to accommodate your needs.)

Cinnamon Rolls {Dairy-free, Egg-free}

I recently posted about Quick Breads and one of my favorite doughs is the Pillsbury brand. I use all different types of their refrigerated doughs for my daughter who is allergic to milk, eggs and peanuts. Most of these doughs only contain the allergen, wheat, so they are safe for my family. I love to keep Pillsbury Crescent Rolls on hand for last minute desserts, bread, etc. that I may need. Sunday morning, I made cinnamon rolls out of the Crescent Rolls which are always a big hit around here.

 

Cinnamon Rolls {egg-free, dairy-free}

1 roll of Pillsbury Crescent Rolls

Smart Balance Light buttery spread

Cinnamon

Brown Sugar

Pecans or Walnuts, optional

Open can of crescents dough and unroll it into a rectangle shape. Pinch together all the seams and use a hand roller or rolling pin to roll it out smoothly. Spread Smart Balance Light buttery spread onto the dough. A thin layer all around will work well. Sprinkle a 'healthy' amount of brown sugar and cinnamon over the buttery layer. Sprinkly chopped pecans or walnuts (optional) on top of that. Then, carefully roll the entire thing up from one end to the other.


If you go from short end to short end, you'll have normal sized cinnamon rolls. If you roll from long side to long side, you'll have several mini cinnamon rolls which is what I did. Then, slice into 1-inch slices (for minis and 2 inch for regular) and place them in a round baking pan that has been greased. Bake at 375 degrees until tops are just turning brown.


Mix together 3/4 cup powdered sugar with 3-4 T almond milk or lemon juice and you'll have a nice glaze to drizzle over the top of your cinnamon rolls.


Serve with fresh fruit and/or bacon. Enjoy!

Convenient Breads {Dairy-free, Egg-free}

I thought I'd let you in on a few of my favorite bread items that can be made quickly and/or conveniently with little to no work involved. When we discovered my daughter's food allergies to milk, egg and peanuts, I immediately realized that most baked goods were out of the question. I began looking for convenient foods that were possibly dairy- and egg-free, but thought I would never find them. Well, to my great surprise, I found out that most of the Pillsbury refrigerated doughs fall into that category!

Some that I use frequently are:

Pillsbury Crescent Rolls - you can do anything with these! Make rolls, stuffed sandwiches, sandwich braids, roll out the dough, pinch the seams and use it for any kind of base for pizza, pies, tarts, etc. The possibilities are endless! {The rolls do contain wheat.}

Pillsbury Pizza Dough - besides the obvious choice of using it for pizza dough, it can be used to make stromboli, cinnamon rolls, pizza rolls, etc. etc. Use your imagination. It's great for a variety of quick fixes. Think appetizers, etc. {Contains wheat}

Pillsbury Pie Crust - read the labels to make sure, but I've used this before for making pastries and pies. Yum. And so easy. Use your own allergy-free fillings and you can make tons of delectable pastries to suit your allergy-free needs.

Pillsbury French Bread Loaf - yes, they really have thought of everything. It's hard to find a good already baked french bread that is allergy-free, but this loaf tastes better than store-bought. It's hot and fresh with just a touch of crunch on the outside and perfectly soft on the inside. SO GOOD to compliment any dish.

They also have breadsticks, Simply Rustic French Loaf, Country Italian Bread, Garlic Bread Sticks and Dinner Rolls. Be sure to read the labels - I haven't tried all of these, and they may have since changed some.

Another wonderful product I always keep on hand is Bisquick! No milk and no eggs involved and they DO have a Gluten-Free Bisquick! I don't know what I would do without Bisquick. {I guess I would have to make everything from scratch!} Bisquick has filled in for us when we haven't thought far enough ahead and always turns out a great product. I make waffles, pancakes, biscuits, shortcake, etc. with Bisquick and my husband came up with a delicious cinnamon swirl coffee cake made from Bisquick. Go here for lots of recipes to make with Bisquick! I love it and just bought another big box of it yesterday.

These are just a few of my favorite convenience items that I wanted to share with you. What can't you live without??
