Chocolate Mousse {Dairy-Free, Vegan}

I recently came across a vegan blog I had never seen before and found a most delicious recipe! As soon as I saw it, I knew I was going to make it. Just a few ingredients? Healthy? Dairy-free & Egg-free?? Yes, yes I will. And I'm pretty sure you'll love this, too.

 *Use only the solid part of the chilled coconute milk for best results.

2 Ingredient Cupcakes {Dairy-Free, Egg-Free}

These are the easiest cupcakes you'll ever bake allergy-free. {Depending on the cake mix you buy, this is allergy-free. I used Duncan Hines Devil's Food and it contains wheat.} All you need is two ingredients and you're good to go! I've made cupcakes with Sprite before, but these are easier and less sticky! So, if you're looking for egg-free cupcakes or cake, this is your best bet! My mom actually saw this on Dr. Oz, so she gets the credit for me finding this! Not only are these allergy-friendly, they are low-cal and still taste delicious!

Strawberry Milkshakes {Dairy-Free}

Who doesn't love a milkshake? Since today's weather is nice and warm in the mid-80's, I thought milkshakes would be the perfect after school snack for the girls! So, while I was at the grocery earlier today, I bought fresh strawberries with a plan in mind. Just scoop up your ice cream {dairy-free, of course}, add fresh strawberries, maybe a tablespoon or two of Strawberry Syrup {Target brand is dairy-free} and some soy milk {or Almond Milk} to get the desired consistency. Mix in a blender or with a quick prep mixing stick {as pictured} and voila! We have smiles all around the table.

Easy Cinnamon Rolls {Dairy-Free, Egg-Free}

This is perhaps the easiest and fastest way to make cinnamon rolls, allergy-free or not. I love that it is quick and different than the everyday cereal breakfast. My girls are out of school today so I decided to see what I could make 'fun' for breakfast that wouldn't take much time. These were a hit!

Easy Cinnamon Rolls {Dairy-Free, Egg-Free}
1 can Pillsbury Crescent Rolls {open and separate into triangles}
Cinnamon/Sugar mixture {we have a shaker with cinnamon/sugar mixed together at all times}
Smart Balance Light buttery spread {this is dairy-free}
Pillsbury Vanilla Frosting {contains soy}

Spread Smart Balance onto each triangle, then shake the cinnamon/sugar all over the 'butter'. Roll up as you would a regular crescent roll. Bake rolls at 375 for 11-13 min or until golden brown. Melt 3T frosting in microwave for 20 seconds. {Not too long or it will get very thick and gooey.} Drizzle over baked rolls. Serve.
